Oatmeal Raisin Cookies

I am starting to use oats more and nothing like using them for cookies. It was easy to make and very delicious, the fact that you are eating oats made me very happy. I tried them for the first time so only made 12 cookies, I am definitely going to try them again. It is a good snack at work. 




Oatmeal Raisin Cookies

Canola Oil - 1/4 Cup
Brown Sugar - 1/4 Cup
Egg - 1
Vanilla Extract - 1/4 tsp
All purpose flour - 1/4 Cup
Old fashioned rolled oats - 1 Cup
Baking Soda - 1/8 tsp
Ground Cinnamon - 1/4 tsp
Ground Nutmeg - 1/8 tsp
Raisins - 1/4 Cup
Salt - a pinch

Preheat oven to 350 C and grease the cookie sheet. 


In a large bowl, mix canola oil, brown sugar, eggs and vanilla until well blended. Combine the flour, baking soda, salt, cinnamon and nutmeg; stir into the sugar mixture. Mix in the oats and raisins last. Drop by rounded spoonfuls onto the prepared cookie sheet.

Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
